This Instant Pot wild rice soup is loaded with protein and vegetables, and it is so easy to make. It is a delicious and comforting dish that is perfect for meal prep!
Set Instant Pot to “Sauté” and add oil. Sauté carrots, onion, and celery until fragrant. Add garlic and stir for about 30 seconds.
Add chicken, wild rice, and spices. Stir. Add chicken broth. Close and lock the lid.
Set the dial to “Sealing”. Pressure cook on high for 15 minutes. Use natural release for 10 minutes, then manually vent.
Shred the chicken breasts either outside or inside the Instant Pot, as desired. Serve and enjoy.
