Made with no bananas and sugar-free, gluten-free, grain-free and dairy-free! Delicious and easy to make!
Preheat oven to 350ºF and line the bottom of an 8-inch loaf pan with parchment paper, rubbing the sides with coconut oil.
In a medium bowl, whisk almond flour, coconut flour, baking powder, cinnamon, baking soda and salt.
In a separate large bowl, whisk all remaining ingredients until well combined. Stir flour mixture into wet ingredients until well-mixed. Let stand for 10 minutes for the coconut flour to start absorbing the moisture.
Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 50 minutes to 1 hour. Let cool in the pan for 1 hour. Gently remove to a cutting board, slice and devour!
Notes:
• As always, please weigh your flours to ensure results.
• Slice this when it’s still a bit warm! It gets a harder crust when it’s completely cool and is harder to cut.
