This easy baked tofu comes together in under an hour in a delicious soy sauce mixture. It’s perfect for meal prep and goes great over rice, salad, or stuffed into tacos!
Whisk mirin, rice vinegar, soy sauce, and sesame oil in a shallow dish. Add tofu and marinate for 30 minutes.
Preheat oven to 425ºF and transfer the tofu to a baking sheet lined with a silpat or parchment paper. Reserve the marinade.
Bake tofu for 15 minutes until lightly crispy at the edges.
Meanwhile, simmer the marinade in a small pot until reduced by about a third. Serve as desired (see notes).
Notes:
• I love this for meal prep, and make two or three blocks of tofu at a time to use throughout the week.
• This is great on rice bowls, over veggie curry, or in salads!
• The reduced marinade is wonderful as a salad dressing or drizzled over the baked tofu and rice.

@yixing222 I use firm or extra firm! The texture won’t change that much with those two variations. Enjoy!
