An incredible way to cook an incredible steak! The flat iron is one of the most tender and flavorful steaks available. This is a no-fail way of cooking this wonderful steak.
Season both sides of the flat iron steak with salt and pepper. Vacuum seal the steak in a FoodSaver bag.
Immerse steak into a water bath maintained at 135°F by a sous vide immersion circulator. Let the steak cook at 135°F for 2 1/2 hours.
Remove steak from the plastic bag and pat dry with paper towels. Sear steak for 1 minute each side to develop the crust. You can sear the steak on your stove using a cast iron skillet, or in your oven using the broiler, or on your grill.
Slice steak and serve with your choice of vegetables and sides.

Yes – sous vide is the best way to cook a steak and we lover 135F (nice medium rare for us).
This will be your new go to for cooking steak (among other meats you can sous vide).
The only question is on how you sear it. You can sear in cast iron with some oil and butter (which is the method we mostly use), or do it on a bbq, a blowtorch or any other way you may like to sear something.
