This is a meatloaf that is often requested by my family. We got the recipe from a church cookbook, and it quickly became a family favorite!
Combine ground beef, bread crumbs, egg, onions, seasonings, green peppers, and ¾ cup tomato sauce in a bowl, mixing well.
Pat meat mixture into a 9×13 inch rectangle on waxed paper. Sprinkle with cheese and mushrooms. Roll, as you would a jelly roll, sealing the edge and ends.
Place seam side down in an 8×12 inch (9×13 works just fine) baking pan. Bake at 375° for 30 minutes. Pour off drippings, pour remaining tomato sauce over the loaf, then bake for 30 minutes longer.
Notes:
Many times I have left out the regular salt and just used seasoning salt and vice versa. Having both in there makes it just a little too salty, but I’m not one who likes salty food.
I usually switch out the tomato sauce with pizza sauce or spaghetti sauce (at different times, obviously) with great results! Our favorite is to use spaghetti sauce, as the plain tomato sauce is just too much tomato and not a lot else.

You know, I never have put green peppers in this. I rarely use them unless the recipe pretty much says “Use the green peppers or all is lost”.

I made this today, leaving out the green peppers due to an allergy. I also made with a combo of beef and turkey and spaghetti sauce. It smells really yummy and tastes just as good.
