This is a great raw food alternative that is healthy, filling, and delicious.
If you don’t have almonds left over from making homemade almond milk, soak almonds overnight in a bowl of water with a pinch of salt. Drain, then grind in a food processor.
In a food processor, combine onion, garlic, and parsley, pulsing until finely chopped. Add almonds, sunflower seeds, salt, and spices. Pulse until everything is mixed well, pausing occasionally to scrape the sides down.
Form into patties. At this point, it’s ready to eat, but I liked mine dehydrated a little. To dehydrate them, place them on a baking sheet lined with foil and bake at 200°F for 30 minutes.
Serve on a bed of chopped or sliced kale mixed with lemon juice and olive oil or with either of the sauces from my healthy falafel recipe (see related blog post).
