Chickpeas have a natural nutty flavor and can be used for a lot of different recipes.
Put flaxseed meal in a big bowl and add warm water. Stir to combine and let it set for about 5 minutes.
Add chickpea flour, cumin and paprika to the bowl. Stir with a wooden spoon. Begin adding cold water slowly, while stirring (I switch to a whisk for this). Keep adding water until batter is smooth. If too thick, add additional water in 1-tablespoon amounts.
Heat skillet on medium high heat. Brush some oil onto the pan. Using a big spoon, place batter on the pan, making a pancake shape and swirling the batter around. Cook tortilla until surface is dry, then flip. Bake the other side until golden brown.
Take the tortilla out of the pan and cover with clean kitchen towel. Repeat until all tortillas are done.
