These 3-ingredient apricot cashew no-bake energy bites are a quick and easy, healthy snack for busy days! Gluten-free and paleo and vegan friendly too!
If using coconut flakes, preheat oven to 350ºF and spread flakes on a baking sheet. Bake until golden brown, stirring occasionally, about 3–6 minutes. Watch them closely, as they burn quickly.
Place cashews in a large food processor and process until crumbly and broken down. Add dried apricots and process until well mixed and mixture begins to form a sticky dough. With the food processor running, stream in oil. Process until it forms a ball.
Use a 1-tablespoon measure to scoop the ball and roll into bites. Roll in toasted coconut, if using, and place onto a parchment paper lined baking sheet. Chill for 1 hour or so until they lose their stickiness, and then place into a container to store in the refrigerator.
Devour as you need energy!
Note: If the dough is too sticky to roll right away, just chill it for 15–20 minutes in the refrigerator. But mine was fine right away!
