Chocolate Chip Cookie Bites—the healthy vegan version! With a delicious fudgy core and a slightly crunchy outside. So yummy!
Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
Place chickpeas, oat flour, peanut butter, almond milk, maple syrup, baking powder, and vanilla in a high-speed blender or food processor and use the blender stick to mash them down until you have a more or less smooth batter (it’s ok if there are still a few chickpea pieces left).
Place the batter in a bowl and add chocolate chips and combine with a spatula. Use your hands to form small bite-sized balls and place on the baking tray.
Place the tray in the oven and bake for 10–15 minutes. Enjoy warm or store in airtight container for a week!
