A quick and easy dish for kitchen newbies to throw together. Simple, delicious and healthy.
Beat eggs until smooth. Season with some salt.
In a frying pan over medium-high heat, add oil and spring onion stalks (leave the green leaves for garnish). Saute until golden. Add beaten eggs, stir gently until eggs are almost cooked but still moist,
Add tomatoes and sugar, stirring and turning occasionally, until juices are released and tomatoes are soft. Sprinkle the reserved green parts of the spring onion and serve.
