Garden bursting with bite-size tomatoes? Here’s my “faux” sun-dried technique for preserving them for months!
Cut tomatoes in half lengthwise and place them, cut side up, on dehydrator tray(s), leaving room between each for air to circulate. Sprinkle lightly with kosher salt. Set dehydrator on low and run for approximately 10–15 hours (will vary depending on size), rotating trays several times, until tomatoes are leathery and no moisture is released when pressed between thumb and forefinger. Some tomatoes will be done before others so remove them from the dehydrator as necessary.
Allow tomatoes to cool completely before placing in a jar and covering with olive oil. Keep refrigerated for several months.
