Description

A protein-packed avocado toast with chia seeds and edamame, topped with spicy pickled veggies. Makes for a great lunch or dinner.

Ingredients

  • ½  Avocado, Mashed
  • Sea Salt And Pepper, To Taste
  • A Squeeze Of Lime Juice
  • 1 slice Good Quality Sourdough Bread, Toasted
  • 1 teaspoon Chia Seeds
  • ¼ cups Edamame, Cooked
  • ¼ cups Or More Trader Joe's Spicy Pickled Veggies
  • 3 sprigs Parsley, Rinsed And Dried
  • 3 sprigs Cilantro, Rinsed And Dried
  • 4 leaves (small) Mint, Rinsed And Dried

Preparation

Mash avocado, season with sea salt and pepper and add the lime juice. Spread the mixture over the toasted slice of bread.

Sprinkle with chia seeds and then edamame. Top with spicy pickled veggies and herbs.
