This modern take on a family favorite won’t disappoint! Make the meat lovers and veg heads in your family happy with this ground beef and quinoa combination.
Preheat oven to 350ºF.
Brown the ground beef in a small skillet and drain any excess grease. Meanwhile, cook quinoa according to package directions.
Wash peppers, remove stems and seeds, and cut each in half lengthwise. Set aside.
Add salsa to the ground beef and simmer on low until quinoa finishes cooking. Stir cooked quinoa into the beef and salsa mixture.
Lay each pepper half in a 9×9 glass dish and add the stuffing to each. Cook for 20 minutes at 350ºF. Increase oven temperature to 400ºF and add a sprinkling of mozzarella cheese to each pepper. Bake peppers for another 5 minutes or until cheese melts and browns slightly.
