I really like caramel, but I am not much of a candy maker. I made a half recipe, because I have too often ended up with gallons of candy goo. They made really good caramels! However, the part of the recipe that you cannot stir the candy burns a layer onto the pan that is very hard to wash off. I put the caramel through a mesh strainer to get out a few burnt bits out that came up when I added the vanilla. The caramels taste great though and are worth it. These would be really great for Christmas gift baskets. =)

I was so excited to make these caramels! I followed the recipe exactly, but unfortunately the mixture did not set. It remained very soft and almost liquid. I cooked it to 250 degrees too. I managed to wrap up spoonulls in waxed paper, but have to store them in the freezer to keep them in a somewhat-solid state. I rated this a 3 out of 5, but if it had set up I would have given it a 5 out of 5.

just a comment for the reviewer…if you haven’t already, you might check your thermometer to make sure it is accurately measuring the temp.
I had some candies not working out and come to find out, it was my thermometer, it was several degrees off!
Who’da thunk it?
