Adapted from Mollie Katzen’s “Eat, Drink and Lose Weight.” Two out of three ain’t bad…
This is the only recipe I make from memory I serve it with steamed spinach, to which I add olive oil, salt & pepper, chopped garlic, pine nuts and raisins (also an adaptation from Mollie’s book).
Preheat the broiler and set the rack to about 6 inches from the heat.
Cut the eggplant in half lengthwise and brush both sides with olive oil.
Place on a broiler pan and broil, 5-7 minutes each side
Once the eggplant is done, move the rack up so it’s closer to the broiler.
On each eggplant slice, place 1 tablespoon of tomato sauce, 1 tablespoon ricotta, 1 tablespoon shredded mozzarella, 1/2 teaspoon parmesan cheese.
Place under the broiler again and heat until the cheese is melted, about 3-4 minutes. Sprinkle with the basil.

I liked this even though I didn’t broil it on both sides, I’m sure it would be even better if I had done that.
