A refreshing spring/summer salad. Great as a lunch option or a main course for two!
In a small skillet/frying pan over medium-high heat, melt butter. Once melted add chicken breast and sprinkle chicken with salt, pepper, onion powder and lemon juice. Cook for 4 minutes on each side or until juices run clear. Remove from heat.
In a bowl add cubed mango, diced celery, diced scallion, lemon zest, lime juice, lime zest, cooled cooked chicken cubes and olive oil. Gently toss with two spoons. Enjoy!
