This breakfast quinoa is quick, easy and tastes like a bowl of Funfetti cake! The protein powder swirl makes it extra creamy and healthy!
For the quinoa:
In a large pot bring almond milk to a boil. Once boiling, stir in quinoa and half of the Truvia. Cover, reduce heat to low, and cook until most of milk is absorbed, about 20–25 minutes. Once quinoa is cooked, stir in remaining Truvia (see note below) and divide quinoa between bowls.
For the protein frosting:
In a small bowl, stir together vanilla protein and almond milk until consistency of frosting (see note below). Dollop “frosting” on bowls of quinoa and cover with sprinkles.
Pour a little bit of almond milk over top of each bowl and devour.
Notes:
1. Depending on how sweet your protein is, you may need less or more Truvia. So adjust to your preferences.
2. The amount of milk you use will depend on your protein powder, and how thick it is.
