This delicious, nutritious, vegan and gluten-free Raw Tapioca Pudding with chia seeds is ridiculously easy to prepare.
Place cashews and water in a powerful blender (such as Vitamix) and blend on high speed until smooth. Blend in honey, vanilla, almond extract and salt.
Place chia seeds in a large Mason jar (half-gallon size). Pour cashew mixture into jar and shake well (very well!). Place in the refrigerator overnight.
Serve.
