Butternut squash, superfood kale and savory pine nuts make this the perfect healthy yet hearty meal!
1. Heat olive oil in large sauté pan over medium-high heat.
2. Add squash and sprinkle with salt, pepper and chili powder. Cook for several minutes, turning gently, until squash is golden brown and tender.
3. Remove to a plate and set aside.
4. In same pan on low-medium heat, add vegetable broth, kale and pine nuts. Cook for 5–10 minutes, stir until wilted. Add the cooked squash and gently toss together. Serve and enjoy!
