Another recipe my friend Teach James left me, as I took care of her the last few years she lived. She was a wonderful person and had some great recipes! Serve this over rice, pasta, etc.
Mix all of the meatball ingredients together (everything except the oil) in a large bowl then form into your preferred size of meatballs. Heat the oil in a large skillet over medium heat. Brown meatballs on all sides (you don’t have to cook them all the way through).
Remove meatballs from the skillet and place in a casserole dish. In the same skillet, saute chopped bell pepper until nice and soft. Stir in flour and mix to coat the peppers and cook away some of the flour taste. Add tomatoes and sour cream. Cook until thick, then pour over the meatballs and bake in a 300 F oven for 30 minutes.

Made these earlier this week and chose 1 lb obeef and 1 lb of pork instead of the 2 lbs of beef. Was sooo delish with garlic mashed potatoes and steamed veggies!

This sounds good-into recipe box it goes! I’m always looking to widen my variety of ground beef recipes, especially with money so tight right now. I’m glad your friend lives on in your heart, and through her recipes. Thanks for sharing something so special to you!
