Description

Rich, fudgy brownies that take less than five minutes to make and are gluten-free, sugar-free and dairy-free? It’s not too good to be true. Just try these brownies to understand why they are called “irresistible”!

Ingredients

  • 2 cups Raw Walnuts
  • 1 cup Cacao Powder
  • ¼ teaspoons Cinnamon (optional)
  • 1 teaspoon Vanilla Extract
  • 22  Dates, Pitted (I Used Mejdool Dates)
  • ½ cups Chopped Almonds (optional)

Preparation

Line the bottom of an 8×8 pan with parchment paper. Set aside.

Add walnuts into the food processor and let it run until the walnuts are almost a rough flour-like consistency (10-15 seconds). Add cacao powder, cinnamon and vanilla and process another 5 seconds. Slowly add dates and process until mixture is crumbly, but holds together when pressed together with your fingers.

Mix in chopped almonds by hand and press the mixture into the prepared pan. Let it set in the fridge for an hour.

I really enjoyed these, but I that may be because I typically enjoy chocolate that’s on the less sweet side. If you want something a little sweeter, I think you could either add more dates or just a bit of some other sweetener. These also came out a bit crumbly for me. I think maybe the dates I used were on the small side, and that probably contributed to the sweetness level and moisture content. I would make these again but would add a few more dates.

Oh my. These are fantastic! My husband and I have recently gone gluten, sugar and dairy free, but having a treat once in a while is still appealing! These have an incredibly rich, chocolaty flavor. My husband was hesitant, the ingredients don’t exactly scream TREAT, but he was so very surprised! Now I have to keep him from eating the entire batch at once.
