Description

Gooey, chewy and so cute!

Ingredients

  • 8 ounces, weight Cream Cheese, Softened
  • ½ cups Unsalted Butter, Softened
  • 1 whole Large Egg
  • ¾ packages (3 Oz. Size) Raspberry Gelatin (use 1/2 Package For Less Raspberry Flavor And 1 Whole Package For Full Raspberry Flavor)
  • 1 box (18 To 20 Oz. Size) White Cake Mix
  • 1 drop Pink Food Coloring (optional)
  • Powdered Sugar, For Sprinkling Over The Top

Preparation

Add cream cheese and butter into the bowl of your mixer and cream until smooth. Next turn mixer to medium, add the egg and continue mixing until batter is smooth.

Then turn your mixer to a low speed and add in gelatin, cake mix and food coloring until everything is well combined and thick.

Remove finished cookie dough from the mixer, cover bowl with a sheet of plastic wrap and refrigerate for 20-30 minutes.

While dough chills, preheat your oven to 350 F.

Remove chilled dough from refrigerator and roll into small balls and place on a parchment paper lined cookie sheet, spacing them about 2 inches apart.

Sprinkle the tops of the cookies with powdered sugar and bake for 10-12 minutes. Remove from oven and cool for 10 minutes.

These are *great*! I’m going to try them in other Jello flavors, too. I think for a party, I’d do several flavors, since they are so brightly colored and pretty–how about lemon, raspberry, and tangerine?! My husband especially loved the soft, marshmallow-like texture. I did chill the dough overnight, used an ejecting cookie scoop, and scattered a bit of flour on the counter to pat my hands in as I rolled them, since the soft dough is a bit sticky. Still, it didn’t take all that long to make them and very worth it. A new favorite!

Highly flavorful, bright, fun cookie with a soft, slightly chewy texture. These are excellent and unusual. My neighbors and I couldn’t stop eating them. Recommendations: The dough is very soft and may need chilling longer than stated in the instructions. It does not get “firm”, but it is easier to work with when it is chilled. Dust cookies with powdered sugar after baking. All of the powdered sugar on the cookies that I made dissolved into the cookie when baked. No problem, just dusted them again after they cooled.
