Description

Kickier version of traditional meatloaf — great for Sunday afternoon football!

Ingredients

  • 2 pounds Ground Beef
  • 2 whole Eggs
  • ½ cups Bread Crumbs
  • ½ cups Frank's Red Hot Sauce
  • 1 Tablespoon Garlic Powder
  • 1 teaspoon Salt
  • 1 whole Carrot
  • 1 whole Vidalia Onion
  • 2 Tablespoons Butter
  • 1 jar Maries Blue Cheese Salad Dressing

Preparation

Put the ground beef in a large mixing bowl

Beat the 2 eggs and add to the ground beef
Add breadcrumbs and Franks Red Hot Sauce to the ground beef (do NOT use Tabasco–Franks is the only way to fly!) Add garlic powder to the ground beef mixture and then add 1 tsp salt. Mix all ingredients thoroughly.

Dice carrot and onion, and saute in 2 tablespoons butter until just starting to soften. Set aside.

Divide beef mix in half. Press half the meatloaf mix into a meatloaf pan. Spoon half the jar of Marie’s Blue Cheese over the meat mixture. Spoon sauteed carrot and onion over blue cheese. Press remaining meatloaf mix over the blue cheese/veggie layer

With a spoon, create a small channel (ditch?) lengthwise down the top layer of the meatloaf. Spoon remaining blue cheese dressing down the “ditch” and VERY lightly add a thin stream of Frank’s Hot Sauce over the blue cheese.

Bake at 325 for one hour. If the blue cheese topping is getting too brown, tent w/ foil during the cooking process. Allow to cool for 10 minutes (tented w/ foil) before slicing and serving.

Very tasty, although I did a chicken’s version & cut back on the heat. BUT the kids all loved it, a major coup in our house. Will definitely be making again.
