Fresh healthy salad with shrimp.
I use big frozen uncooked shrimp, better if they are already without heads, tails and de-veined. You can also use fresh shrimp instead.
Cook the shrimp in boiling water just until pink, about a few minutes (or follow package instructions). Drain and let cool. Peel.
Diving salad among plates. Add shrimp on top of the salad. Add oil, a pinch of salt and a squeeze of lemon juice. Serve as is or with mayonnaise.
