They are so easy to make. I love combining a bunch of ingredients like this, baking them off and voila! You have breakfast! Heck, even lunch or dinner if you like.
Preheat oven to 350ºF.
Heat tater tots in microwavable bowl about 2 minutes until defrosted. Mash the tots with a fork or potato masher until broken apart.
Heat canola oil over medium heat in an ovenproof 8-inch skillet. Add the tots and cook for about 2 minutes. Remove from heat and set aside.
In a stand mixer add eggs, salt, pepper, oregano, half-and-half and baking powder. Mix on high power until eggs are thick and fluffy, about 1 minute. Add the cheddar cheese and ham mix well and pour into skillet over potatoes.
Bake at 350ºF for 20-30 minutes until middle is set. Serve immediately.
