An easy, delicious side dish that’s perfect for any summer BBQ!
In a medium sized bowl combine the rice vinegar, canola oil, peanut butter, sugar and the little packet of soup mix seasoning. Beat well with a whisk and set aside.
Break the ramen noodles into small pieces in a separate large bowl. Add the cabbage, carrots, cilantro and green onion and combine. Add the dressing and toss. Sprinkle with peanuts.
You can serve immediately and the noodles will be crunchy, or make ahead of time and the noodles will soften slightly. Either way is delicious!
