A muffin full of BBQ meat and cheese makes for a simple supper!
Preheat oven to 350 F. Spray 16 spots between two 12-count muffin pans.
In a skillet over medium heat, cook beef and onions. Break up the meat as you go and season with salt and pepper to taste. Once meat is browned and onions are soft, drain grease if you want to. Then stir in BBQ sauce and heat for 5 minutes more.
Take 8 biscuits and carefully pull them apart horizontally to make 2 full circles. The dough is layered, so it’s easy to split. Press into each of the greased muffin tins, pressing the dough up the sides.
Divide meat mixture into each cup and sprinkle with cheese. Bake for 10-15 minutes until golden brown.
Serve with a salad or raw veggies for a simple supper.

These look like fun, and so quick and easy! I froze a couple of servings of Drip Beef left over from our Super Bowl food, and have been looking for some different way to serve it. Looks like it’s time to defrost…
