Description

A favorite on our Christmas List. I even make batches for my husband’s co-workers!

Ingredients

  • 1 cup Butter (no Substitute)
  • 1 cup White Sugar
  • ½ cups Packed Brown Sugar
  • 2  Whole Eggs
  • 1 teaspoon Vanilla Extract
  • 3 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 56  Andes Mint Chocolates, Divided

Preparation

1. Cream butter and sugars until light and fluffy.
2. Add eggs, one at a time, mixing after each addition. Mix in vanilla extract.
3. Combine dry ingredients in a separate bowl and mix well.
4. Slowly add dry mixture to butter/sugar mixture. It will become difficult to add, so you will need to use your hands for last 1/2 cup or so of flour.
5. Cover and chill for 2 hours or until easy to handle.
6. Unwrap mints. Place 42 in a bowl and set the remainder aside to melt for drizzle for finished cookies. Preheat oven to 375ºF.
7. Divide dough into 42 pieces. Wrap a piece of dough around a mint to cover completely.
8. Place on greased cookie sheet and bake at 375ºF for 10-12 minutes or until set and bottom is lightly golden.
9. Melt remainder of mints in a microwaveable bowl. Using a spoon, drizzle over top of baked cookies.
