Description

I have recently become severely allergic to eggs. When looking for an egg-free banana bread recipe, I found this one on an Australian website. My four boys don’t even notice a difference!

Ingredients

  • 1-½ cup Mashed Ripe Bananas (1 1/2 Cups Is Approximately 3 Medium Bananas)
  • ½ cups Butter/margarine, Melted
  • ½ cups Milk Or Buttermilk
  • 1 teaspoon Vanilla Extract
  • ¾ cups Sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1-½ cup All-purpose Flour
  • ½ cups Chocolate Chips/Nuts

Preparation

1. Preheat oven to 350 F.
2. In a mixing bowl, combine banana and butter (see note).
3. Add milk and vanilla and mix.
4. Add sugar, baking soda and salt and mix to combine, then add flour and mix just until combined.
5. Fold in chocolate chips or nuts (if using).
6. Pour mixture into a greased and floured standard size bread loaf pan.
7. Bake for 1 hour, or until a toothpick inserted in the centre comes out clean. Remove from oven.
8. Cool for 10 minutes in the pan, then remove to cool on rack before cutting.

Notes:
1. May use vegetable oil or a combination of 1/4 cup oil and 1/4 cup applesauce in place of butter or margarine.
