It doesn’t get any better than this!
For the burgers:
In a large bowl mix beef, egg, breadcrumbs and 2 tablespoons of teriyaki sauce together. Form 6 patties. Salt and pepper the burgers and set aside.
Heat butter in a large fry pan over medium heat. Once melted add the sliced sweet onion (the small one) and saute it in the butter until translucent. Add the beer, cook and reduce until beer is almost gone. Add the mushrooms and stir fry until tender. Add the cup of teriyaki sauce and mix to combine. Keep it on low while you make the burgers.
Fry the burgers on a grill pan over medium-high heat for 5-6 minutes per side or until desired doneness is reached. Then place them in the fry pan with with teriyaki mixture. Cover and let them sit while you make the onion rings.
Preheat oven to 200 F. In a shallow bowl mix the tempura batter with the beer until the lumps are gone, but don’t over mix. Use only as much liquid as you like. The thinner the batter the lighter and crispier the onion ring. Set the bowl of batter over a bowl filled with ice.
Heat oil in a wok until hot enough that a small piece of bread will float and sizzle. Working quickly and in small batches dip onion rings into batter and completely coat. Drop them one by one into the wok. Turn when golden on one side and then remove when golden on the other. Transfer onto a paper towel lined plate. Salt immediately. Keep the plate in the oven while continuing to make the onion rings.
Reheat burgers if necessary and serve on the sesame seed buns with the mushrooms, onion and teriyaki mixture. Sprinkle the top with sesame seeds. Serve with the onion rings. Oh so crazy good with a bottle of Steam Whistle beer!
