Yes, it’s out of a can (several actually), but it’s quick and tasty.
Open all cans, draining the corn and black beans (you can rinse the black beans, too, if you want).
Mix the corn, beans, diced tomatoes and cheese in a bowl. Use this as quesadilla filling with the tortillas.
Heat a skillet on medium heat, and lay one tortilla in the pan. Put some filling one side of the tortilla and fold the other half over top. Brown the tortilla lightly on this side (a couple of minutes), then carefully flip over.
Put a lid on the pan to help the cheese melt, and brown the other side (another couple of minutes). Keep warm in an oven, or serve immediately.
