A vegan granola bar. Naturally sweetened and so yummy, it could be dessert.
Preheat oven to 350ºF. Spray an 8×8 baking dish with cooking spray.
In a large mixer combine banana and peanut butter. Add maple syrup and cinnamon. Mix well.
Add in oats. Make sure all the oats get moistened; add more syrup and peanut butter if needed. (The less moist your oats are, the more crunchy your bars will be.) Fold in nectarines, almonds, and dried cherries.
Press mixture into baking dish so it is even and tightly packed. Bake for 30 minutes until bars are firm and set. Let cool at least 1 hour before cutting into squares. Enjoy.
