Description

A fellow food blogger’s late father-in-law made a pretty mean meatloaf. I decided I had to give his recipe a try, and am I glad I did. This recipe is the bomb. We loved it. Even the kid who hates everything had 3 servings.

Ingredients

  • FOR THE MEATLOAF:
  • 2-½ pounds Ground Beef
  • 2 whole 4-ounce Sleeves Saltine Crackers, Processed Into Crumbs
  • 1-½ whole Onions, Minced
  • 4  Eggs, Beaten
  • 1 teaspoon Salt
  • ½ teaspoons Ground Black Pepper
  • 3 Tablespoons Honey Mustard
  • ½ cups Ketchup
  • 1 teaspoon Worcestershire Sauce
  • FOR THE TOPPING:
  • 1 cup Brown Sugar (light Or Dark)
  • 1 cup Ketchup

Preparation

Preheat oven to 375 F. In a large bowl, mix all the meatloaf ingredients together. Form into 2 equal size loaves and place the loaves in a greased 9×13 pan, leaving about an inch of space around each of the loaves.

In a small bowl, mix together the brown sugar and ketchup topping and pour it evenly over the loaves.

Cover the dish with foil and bake for 45 minutes. Remove foil, baste meatloaves with sauce from the bottom of the pan and return to the oven to cook uncovered for another 5-10 minutes. Remove from the oven and let stand for 10 minutes before slicing.

I am surprised that this recipe and Ree’s recipe do not include red and green peppers chopped up. In fact, Ree’s recipe does not call for any onions or peppers.

Very good meatloaf, will have to cut in half next time but great for a big family I am sure.

I’m not a fan, just like marylloukemp up there, but it is my husband’s favorite meal. I made it for him, and although I still wasn’t CRAZY about it, it wasn’t the terrible thing I remember from childhood. My husband, he loved it. THanks for the great recipe!

I was not a meatloaf lover until now, but it is my husband’s favorite meal. However, I tried this recipe and now I make it at least once every two weeks. Since it is just the two of us we have enough leftover for several meals which I love. For those meatloaf skeptics, this recipe deserves a try. It is the mother of all meatloafs, trust me!!

Excellent meatloaf! My husband and kids loved it. I browned several strips of bacon and criss-crossed the strips across each meatloaf. Everything else followed the recipe. It was over-the-top good! Good enough to serve company. Thank you

Made this for my mom. She said it was the best she ever had and she loves meatloaf. I would probably leave off the topping for myself but it was a big success
