My cousin gave me this recipe for my son because he was super picky and wouldn’t eat anything. Now we make and freeze mass quantities of it. It’s so good that I’ve been known to steal it and eat it with my own oatmeal in the morning.
1. Place apricots, apples, and liquids in a sauce pan. Scrape in vanilla bean seeds and add those and the pod. Bring to a boil, reduce heat, and simmer covered for 6 minutes.
2. Stir in pears. Cover and simmer for an additional 4 minutes.
3. Remove vanilla pod and puree fruit and juices together until the desired consistency is achieved.
Note: This is also a fun recipe to play with. If you’d like to replace the apples with something else, go for it. Firmer fruit should be simmered with the apricots before the pears are added in. Softer fruits may have to be added with or after the pears. It’s fabulous with cherries or blueberries.
