This delicious homemade hamburger helper recipe is the healthy alternative to store-bought Hamburger Helper. It contains much less salt and is packed with nutrients from ‘hidden’ vegetables!
1. In a large saucepan, brown the ground beef over medium heat. Drain fat.
2. Add egg noodles, milk, water, soup base, and salt. Stir well. Bring to a boil. Reduce heat to low and simmer for 15 minutes or until noodles are al dente, stirring occasionally.
3. Add cauliflower puree. (To make this, puree cooked cauliflower and a bit of water using a powerful blender. You can then freeze any leftover cauliflower puree in ice-cube trays. Five cubes equals approximately 1/2 cup puree.)
*Note: the recipe will turn out fine and will taste great without the cauliflower, but it adds a nice boost of nutrients.
4. Add diced broccoli florets. Stir mixture to blend vegetables. Simmer for an additional 5 minutes. Serve hot.
