Italian Tortellini soup with sausage, carrots, and zucchini. Healthy but yummy.
If sausage comes in casing, remove casing and break up into small pieces. Brown sausage in 1 tablespoon olive oil over medium heat. Remove sausage; cook onion and garlic in same pan (add remaining tablespoon of olive oil if needed) until tender. Add back in cooked sausage and the broth, water, tomatoes, carrots and seasoning. Bring to a boil. Reduce heat; simmer 30 minutes.
Skim any fat from soup. Stir in zucchini and tortellini and simmer for 20 minutes.
Serve with parmesan cheese sprinkled on top .
