I Hate Feta Bean Dip

Description

I’m not a feta fan. Yet somehow, amazingly, I’m lovin’ this bean dip with some feta in it. Do yourself a favor and try this one out.

Ingredients

  • ⅓ cups Vegetable Oil
  • ⅓ cups White Cooking Vinegar
  • 4 Tablespoons Sugar
  • 6 whole Green Onions, Chopped
  • 1 can (15 Oz. Can) Black Beans
  • 1 can (about 11 Oz. Size) Fiesta Corn
  • 1 can (15 Oz. Can) White Sweet Corn
  • 1 whole Tomato, Chopped
  • 4 ounces, weight Feta Cheese
  • Tortilla Chips, To Serve

Preparation

1. In a bowl, mix together oil, vinegar, and sugar.
2. Mix in chopped green onions.
3. Let this mixture sit overnight or at least for several hours.
3. Thoroughly drain and rinse the beans until the water runs clear. Rinse the corn as well.
4. Add the beans and corn to the oil and sugar mixture.
5. Refrigerate until ready to serve.
6. Before serving, drain the excess liquid off the bean and corn mixture.
7. Add tomatoes and mix well. Add the feta cheese and mix well.
8. Serve cold with tortilla chips.

Yum! I need to put this on my shopping list :) I think something happens to Feta when you get it near vinegar! Seriously, it’s not a cheese I can break a hunk off of and eat plain, but if you mix it with some veggies and vinegar it’s divine :)
