Description

These are moist and delicious chocolate treats. Best of all they are gluten and dairy free! These taste nothing like beans, and they are loved by everyone who tries them.

Ingredients

  • 2 cans (15 Oz. Size) Garbanzo Beans (Chickpeas)
  • ½ cups Almond Butter
  • ½ cups Gluten Free Oats
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 2 cups Brown Sugar
  • ¼ teaspoons Baking Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1 cup Dairy Free Chocolate Chips
  • ½ cups Chopped Walnuts (optional)

Preparation

Preheat oven to 350ºF.

1. Using a colander, drain and rinse beans. Place them in a food processor. Pulse to break up the beans.
2. Add almond butter, oats, and eggs. Pulse until combined.
3. Add vanilla, brown sugar, baking powder, baking soda, and salt. Pulse until well combined.
4. Add chocolate chips and walnuts. Pulse only once or twice just to mix in these last ingredients. You do not want to chop them.
5. Pour batter into a 9×13 oiled baking dish.
6. Bake for 45 minutes. Remove from oven and cool completely before cutting and serving.

Yummy! I used peanut butter instead of almond butter. My husband and 11 y.o. son thought they were delicious! You could not taste the beans at all. Tasted like a bar cookie made with traditional ingredients.
