I love to make gazpacho from scratch, but when time is short, this is a quick substitute that I love to bring to work for lunch.
1. After chopping all the veggies, put them in a bowl and mix them all up.
2. Pour the V-8 juice on top and it’s ready to serve!
3. If you’re not going to eat it that day, keep the veggies in one container and just take a portion and add some V-8 over the top whenever you want a mug of healthy soup with no soggy veggies!
Chopped cilantro, scallions, or tomatoes are also great additions to this easy no-cook soup!
