Growing up, I hated when my mom served meatloaf. Fortunately, it wasn’t often. Even though Mom is a pretty good cook, the meatloaf always turned out bland and burnt around the edges.
My dad is a big fan of meatloaf and shared this recipe with me a few years ago. This is now one of my favorite meals and believe it or not, I request it for my birthday dinner each year (hence the name). Yes, it’s that good!
Melt butter in a heavy skillet. Add both onions, celery, and garlic. Cook, stirring often, until moisture from the vegetables has evaporated, about 10 minutes. Set aside to cool. Cover and refrigerate vegetables until chilled, at least 1 hour.
In a mixing bowl, beat together the eggs, ketchup, half-and-half, cumin, nutmeg, cayenne pepper, salt and pepper. Add beef, sausage, and panko crumbs. Add chilled vegetables. Mix thoroughly with hands, kneading for 5 minutes.
Preheat oven to 350ºF.
Form mixture into a loaf, approximately 12 x 5 x 2 1/2 inches, on a baking sheet. Bake until cooked through (or registers 160ºF on a meat thermometer, about 1 hour). Let rest 20 minutes for 20 minutes before slicing.
