It’s sort of savory French toast meets breakfast sandwich. It’s got all your favorite breakfast ingredients: eggs, cheese and bacon. Or if those aren’t your favorite ingredients add whatever meat, veggies, or herbs you want.

1. Preheat oven to 350ºF. Cook bacon till well done (crispy). Place on a plate lined with paper towels to remove excess oil.
2. Cut out the middle section of the baguette and reserve. Cut the reserved center into cube-sized pieces to be used later.
3. Whisk together the eggs, milk, pepper, onion powder, green onions, and 1/3 cup of cheese in a large bowl. Once well combined, drop in the cubed bread pieces. Stir around making sure all pieces are completely coated in the egg mixture.
4. Take the bacon and layer it on the inside of your hollowed-out bread. Then pour the egg/bread mixture on top of the bacon. Push it down so that you can fit it all in. Sprinkle with remaining cheese and bake till eggs are cooked and the top begins to brown.
5. Slice into individual meal size pieces or if serving as an accompaniment, cut into 1″ slices. Reheat in a toaster oven or oven till middle is warm. Do not use a microwave as bread will get tough.
