Great twist on stuffed shells.
Cook jumbo shells according to package instructions. Drain and set aside.
In a saucepan over medium high heat, brown the ground beef. Drain excess fat. Add cream cheese and mix well until melted. Turn down the heat to low and add the corn, black beans, chili powder, cayenne, garlic powder, salt, and pepper.
In a bowl mix together the salsa and marinara sauce. Grease a 9x13in baking dish and cover the bottom with 1/2 cup of the sauce. Stuff each shell with the beef mixture and place in the baking dish. Top with remaining sauce.
Bake at 350ºF covered for 20 minutes. Uncover and top with black olives, tomatoes, and cheese. Bake, uncovered, for 5 more minutes. Serve with sour cream.
(Inspired by my friend Mary.)

What a grand idea, but I don’t understand the Marinara Sauce? Why not use an enchilada sause? I’m going to try this the next time my granddaughters are here for supper..
Thanks, Pat
