Great as a side dish or complete meal.
1) Follow the directions on the box of couscous, adding the frozen peas to the water, seasoning package, and 2 tbsp. oil.
2) Saute the garlic in remaining 2 tbsp. olive oil, then add the zucchini and cook until golden.
3) In a large bowl, combine the couscous, peas, zucchini, pecans, and feta cheese. Season to taste.

I made this tonight, and it was so easy and delicious! And whatever you do, don’t leave out the toasted pecans. Please, for the love of cooking, don’t.
