Jumbo Cinnamon Butterscotch Oatmeal Cookie

Description
Sweet jumbo oatmeal cookie—for one!
Ingredients
- 2 Tablespoons Butter, Softened
- 2 Tablespoons Granulated Sugar
- 2 Tablespoons Brown Sugar, Packed
- 2 Tablespoons Beaten Egg
- ¼ teaspoons Vanilla Extract
- 4 Tablespoons Flour
- 4 Tablespoons Old Fashioned Oats
- ¼ teaspoons Bakings Soda
- ¼ teaspoons Kosher Salt
- ¼ teaspoons Ground Cinnamon
- 2 Tablespoons Butterscotch Chips
- 2 Tablespoons Cinnamon Chips
Preparation
Preheat oven to 350ºF. Line a small cookie sheet with parchment paper.
In a medium-sized mixing bowl, stir the butter and sugars together until creamed. Add the egg and vanilla and mix.
Stir in flour, oats, baking soda, salt and cinnamon and stir until fully incorporated. Add in butterscotch chips and cinnamon chips and stir.
Place the dough in the center of the prepared cookie sheet and bake for 13-15 minutes, until the edges are browned.
Cool completely on a wire rack.
