Description

Cole slaw with a crunchy twist. Prep time can be cut in half by using store-bought salsa and omitting having to chop onion and jalapeno. Omit cheese for less calories.

Ingredients

  • 3 cups Raw Green Cabbage
  • 1 cup Sliced Grape Tomatoes
  • ½ cups Chopped Cilantro
  • 1 Tablespoon Chopped Jalapeno
  • ¼ cups Chopped Sweet Onion
  • 1 cup Crushed Tortilla Chips
  • ½ cups Cubed Cheese (optional)
  • 2 Tablespoons Best Foods Mayonnaise
  • 3 Tablespoons Fresh Squeezed Orange Juice
  • ¼ teaspoons Ground Cumin
  • Cracked Black Pepper, To Taste

Preparation

Slice cabbage as finely as possible. Put in a bowl and add sliced tomatoes, chopped cilantro, jalapeno pepper, onion, and crunched tortilla chips.

Mix mayonnaise with orange juice and ground cumin and add to slaw mixture. Add cracked pepper to taste.

I forgot to mention that chopping up jalapenos or other hot peppers can cause a severe allergic reaction… please use the utmost care when handling them….I cut them up holding one end with a fork. It only took one experience of “burning fingers” to teach me this lesson…ouch!!!

This salad turned out great although I did deviate just a bit from the original recipe. I’m not a big fan of orange juice, so I substituted a mixture of lemon juice and honey. I used reduced-fat mayo and reduced-fat cheese to make this a healthier lunch option. You could add more onion and jalapeno if you wanted to really spice it up or even chicken to make it a more substantial meal on its own, but this recipe is great the way it is. I can see how adding it to tacos would be a nice change of pace from the ordinary, too. I will definitely be making this again and will probably take it to potlucks and family get-togethers as well.
