We always look forward to New Year’s Day when we get to feast on this delicious brisket with some black eyed peas for good luck!
Note: You need to start it a day early! The prep time is basically marinating – so don’t be scared off! It takes a while to cook – but it is worth every minute!
Day 1: Rub brisket with salt, paprika, garlic salt, black pepper and 1/4 cup barbecue sauce. Place the brisket, fat side up, in a roasting pan. Cover the pan with foil and refrigerate overnight.
Day 2: Preheat oven to 325 degrees F. Remove the foil. Roast brisket in the preheated oven for 3 to 3 1/2 hours (the larger the brisket, the longer the cooking time). Do not take it out early or it will be tough!
In a small saucepan heat soup, 1/4 cup barbecue sauce, mustard, ketchup, Worcestershire sauce and garlic powder over medium heat. Heat and whisk until blended.
After 3 to 3 1/2 hours of roasting, pour sauce over the meat. Continue to cook, covered with foil, for an additional 1 hour. During the hour make sure to baste often.
Remove from oven and let stand 15 minutes. Serve with black eyed peas, mashed potatoes and a salad to ring in the New Year!
