Description

I would like to say that this is a tres elegant meatloaf . . . but it really just adds a dimension of creamy brie goodness. The bacon is an added bonus. Sometimes you just crave meatloaf…

Ingredients

  • 1 pound Extra Lean Ground Beef
  • 2 whole Hot Italian Sausage Links, Casings Removed
  • 2 cups Grated Carrot
  • 2 Tablespoons Chopped Fresh Oregano
  • 1 cup Chopped Fresh Flat-leaf Parsley
  • 1 cup Rolled Oats
  • ¼ cups Oat Bran
  • ⅛ cups Ground Flax Seed
  • 1 teaspoon Chili Flakes
  • 1 pinch Sea Salt
  • Ground Fresh Pepper
  • 2  Eggs, Beaten
  • 1 whole Small Wheel Light Brie Cheese, Rind Removed
  • 2 strips Bacon, Uncooked
  • 1-½ cup BBQ Sauce OR Substitute The Below Glaze
  • FOR THE GLAZE:
  • 1-½ cup Ketchup
  • 2 teaspoons Sriracha Or Chili Garlic Sauce
  • 2 Tablespoons Brown Sugar Or Honey

Preparation

Preheat oven to 350 degrees F.

Mix all ingredients down to the eggs in large bowl. I prefer to use my hands. The spoon and spatula just take too long and aren’t as fun. Mix in beaten eggs (here I use the spatula because of the ewww factor). Chop brie wheel into 1 inch cubes, incorporate into meat mixture.

Shape meat into a loaf shape and place on a broiler pan (a tip from Pioneer Woman).

Chop bacon into small pieces and place on top of loaf.

If you do not have your own BBQ sauce, mix ketchup, Sriracha, and brown sugar/honey together. Cover top of loaf with 1 cup of BBQ sauce or my glaze mixture and place the loaf in the preheated oven.

After 40-50 minutes pour remaining 1/2 cup of BBQ sauce/glaze on loaf and bake another 10-15 minutes.

Let sit a few minutes before slicing into brie and bacon goodness.
