Description

Soul-warming comfort food at its best!

Ingredients

  • ¾ cups Ground Chuck
  • ¾ pounds Ground Sirloin
  • ½ cups Onion, Chopped
  • ⅓ cups Homemade Barbecue Sauce (See My Recipe Box), Divided
  • 1 Tablespoon (heaping) Whole Grain Mustard
  • 1-½ teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Fresh Ground Black Pepper
  • 1 whole Egg
  • ½ cups (12-14) Saltine Crackers, Crushed Into Crumbs
  • 12 ounces, weight Bacon

Preparation

Preheat your oven to 350ºF. Line a sheet pan with foil and fold up the edges, making a dam to catch the drippings/fat.

In a large bowl, combine the beef, onion, 3 tablespoons of barbecue sauce, mustard, seasonings, egg and cracker crumbs. With you super duper clean hands, mix until combined and then form into a 9×5(ish) loaf. Wrap in bacon, tucking the ends under the loaf and then brush with remaining barbecue sauce (or glaze again halfway through) and slide it into your preheated oven for 1 hour or until a thermometer registers at 160ºF. Remove and let rest for ten minutes, slice and serve!

I made this in the muffin pan so I didn’t wrap it in bacon but other than that I followed the recipe and this was delicious. My family loved it!! This will now be our go to recipe for meatloaf sans the bacon. Yum, thank you!!

This is such a wonderful recipe. I made the barbecue sauce to use. I had my sister-in-law over for dinner and requested the recipe. It made awesome left overs too. It is a recipe that you could adapt to include your favorite ingredients but I wouldn’t miss out on using the homemade sauce nor skip out on the bacon. I used thick cut bacon. A keeper of a recipe! Thanks!

Can you please add about 5 more mitts to this rating?! This was outstanding! Made the recipe exactly as written. The bbq sauce was amazing, and it made a lot! My only suggestion would be to use non-stick foil. I did take the advice of one other person and upped the temp a little the last 15 minutes to cook the bacon a little crispier. And DO NOT use bottled sauce! You’re really missing out on a really great flavor. Thanks!
