These cookies are awesome—the chewiness of the figs is balanced out by the crunch of the walnuts and white chocolate chips, without being too sweet.
Preheat oven to 350 F.
In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the egg, then stir in the vanilla. Set aside.
Combine the flour, baking soda and salt in a small bowl. Then gradually stir it into the creamed mixture. Mix in the walnuts, figs, and white chocolate chips.
Drop dough by teaspoonfuls onto ungreased cookie sheets.
Bake for 10 minutes in the preheated oven, or until golden brown.
