Vegan Roasted Acorn Squash.
1. Preheat oven to 400 degrees Fahrenheit.
2. Place squash flesh side up in a roasting pan.
3. Brush the yellow-orange squash flesh evenly with coconut oil.
4. Sprinkle with salt.
5. Drizzle squash flesh evenly with molasses.
6. Place in preheated oven until flesh is very tender and can be easily removed with a fork, about one hour.
7. Remove flesh from skin using a fork once cool enough to handle.
Use as a purée or in soups, baked goods, rice and stuffing dishes, etc.
